If you’re a gin enthusiast with a love for luxurious high tea experiences, the Hyatt Regency’s Gin Curious Garden High Tea is an absolute must. This exceptional offering earns a full five stars from us—delivering refined flavours, exquisite presentation, and truly outstanding service.

From the moment we stepped inside, we were greeted with warmth and grace by the ever-attentive maître d’hôtel, Kippa Sherpa, whose effortless charm and professional composure set the tone for a remarkable afternoon. Although we arrived 15 minutes early, Kippa ensured we were comfortably seated and immediately offered our first round of gin—a thoughtful gesture that did not go unnoticed. With two gin servings included, this experience is a dream come true for gin lovers.

One of the standout features of Hyatt Regency’s high tea is the beautifully staggered service, allowing guests to savour each course at a relaxed pace. This thoughtful approach creates a calm and elegant ambience, perfect for an indulgent afternoon.

✧ Gin Selection

We opted for the Sydney G&T and the Spiced G&T.

  • The Sydney G&T was bright and refreshing, infused with juniper berries, lemon myrtle, and finished with crisp green apple.
  • The Spiced G&T was visually stunning and wonderfully aromatic, featuring spiced gin, red peppercorns, fresh orange, and cardamom seeds.

The savoury selection was both extensive and beautifully curated—so much so that we recommend enjoying only a light breakfast beforehand. Highlights included:

  • Avocado with pickled vegetables
  • Torched creamy brie that melts delicately on the palate
  • A flavourful rabbit terrine
  • A dainty pork taco elevated by a vibrant mango salsa
  • Scallop
  • Arancini
  • Mini beef Wellington

Each bite was dainty, balanced, and crafted with care.

Next came the freshly baked scones—two per person—served with generous clotted cream, strawberry jam, and a fragrant mango chutney that paired beautifully with the apricot–fennel scone. The vanilla–wattle seed scone was equally delightful.

An impressive and extensive tea menu followed, featuring both signature blends and a standout Australian Native Collection. The timing of its arrival—just after the scones—was perfect.

Dessert lovers will be enchanted by the array of elegant, bite-sized creations:

To conclude our experience, we enjoyed our second round of gin—the Strawberry G&T, adorned with fresh strawberries and blended with elderflower tonic. A refreshing and elegant finale.
